Baked Honey Pescado

This makes a very sweet fish. Children gobble it up, and adults may also enjoy it with the following modifications: no honey and 21⁄2 tablespoons of Dijon mustard.

MAKES 4 SERVINGS

2 tablespoons wildflower honey

11⁄2 tablespoons mustard

11⁄2 tablespoons mayonnaise

1 teaspoon lemon juice

Sprinkle of sea salt

1 pound white sea bass

Preheat oven to 400ºF.

In small bowl, combine honey, mustard, mayonnaise, lemon juice, and sea salt.

Place fish in a lightly oiled shallow baking dish. Spread honey mixture on top of fish.

Bake for 15 minutes or until fish flakes lightly with a fork. Serve with a fresh garden salad and gluten-free French bread, such as Gluten-Free Pantry’s gluten-free French bread mix. Store any leftovers in an airtight container in the refrigerator for up to 3 days.
